Ingredients
Ingredients for Making the Dough
All-purpose flour (Maida) β 500 grams
Salt β to taste
Sugar β to taste
White oil β a small amount
Water β as required
Method for Preparing the Dough
First, take 500 grams of all-purpose flour in a large bowl. Add salt, sugar, and white oil. Mix everything well and rub the oil into the flour to prepare the dough mixture.
Gradually add water and knead until you get a soft and smooth dough.
To check whether the flour has been properly mixed with oil, take a small amount of the mixture in your hand and press it. If it holds together and forms a small lump, the mixture is ready.
Finally, apply a little oil over the dough, cover it with a damp cloth, and let it rest for about 20 minutes.
2.Ingredients for Preparing the Stuffing
- White oil β 2 tablespoons
- Onion paste β 3 tablespoons
- Ginger-garlic paste β as required
- Roasted peanuts β as required
- Breadcrumbs β as required
- Chopped green chillies β to taste
- Turmeric powder β as required
- Red chilli powder β to taste
Method for Preparing the Stuffing
First, heat 2 tablespoons of white oil in a frying pan.
Add 3 tablespoons of onion paste and fry lightly. Then add the ginger-garlic paste and sautΓ© for a short while.
Next, add the roasted peanuts, salt, turmeric powder, red chilli powder, and chopped green chillies. Mix everything well and fry lightly.
Finally, add the breadcrumbs and fry everything thoroughly.
Your spicy stuffing for Mughlai Paratha is now ready.

- Eggs β 2 per paratha, or as required
- Chopped onions β as required
- Chopped green chillies β to taste
- Chopped coriander leaves β as required
- Salt β to taste
- Prepared breadcrumb stuffing β 3 tablespoons
Method for Preparing the Egg Filling
Take a bowl and crack the eggs into it.
Add chopped green chillies, chopped onions, chopped coriander leaves, and salt to taste.
Finally, add 3 tablespoons of the breadcrumb stuffing prepared earlier. Mix everything well.
4.How to Prepare Kolkata-Style Mughlai Paratha
First, divide the prepared dough into large portions. Each portion should be approximately twice the size of a regular roti dough ball.
Apply a little white oil to each dough ball to prevent the surface from drying out. Cover them with a damp cloth and let them rest.
Before rolling the parathas, apply oil to the rolling board and rolling pin so that the dough does not stick.
Roll each dough ball into a large, thin sheet.
Once rolled out, gently fold the edges slightly inward with your hands. Place the prepared egg filling in the centre of the dough and spread it evenly using a spoon.
Fold the top side of the dough over the filling. Press the sides gently to seal them and make sure there are no gaps.
Next, fold the bottom side over the folded portion and seal it properly by pressing the edges together.
Gently press the folded paratha with your hands to give it a neat, square shape.
Your Kolkata-style Mughlai Paratha is now ready to be fried.
5.How to Fry the Mughlai Paratha
Heat oil in a tawa or frying pan.
Carefully place the prepared Mughlai Paratha into the hot oil. Fry over medium heat, turning it occasionally, until both sides become golden brown and crispy.
Make sure the paratha is cooked thoroughly on both sides.
Once cooked, remove it from the pan and place it on a plate.
Your delicious Kolkata-famous Egg Mughlai Paratha is ready to serve!
