📝 Ingredients
Quantity: 1.5 kg Chicken
Chicken: 1.5 kg (leg pieces and breast pieces)
Ginger Paste: 2 teaspoons
Garlic Paste: 2½ teaspoons
Charmagaz Paste (Melon Seed Paste): 2 tablespoons
Cashew Nut Paste: 50 g
Poppy Seed Paste: 1½ tablespoons
Sour Curd (Yogurt): 200 g
Green Chilli Paste: 2 teaspoons
Turmeric Powder: 1 teaspoon
Kashmiri Red Chilli Powder: 2 teaspoons
Homemade Garam Masala Powder: Prepared using the following whole spices:
1 piece of mace
7–8 green cardamoms
6–7 cloves
2 pieces of cinnamon
Seeds from 2 dried red chillies only
1 small piece of nutmeg
A few dried rose petals
White Cooking Oil: 200 g
Ghee (Clarified Butter): 2 teaspoons
Fried Onions (Beresta): 500 g
Salt: To taste
👩🍳 Cooking Method
Step 1: Prepare the Garam Masala
Heat a dry frying pan over a low flame.
Add the mace, green cardamoms, cloves, cinnamon, dried red chilli seeds, nutmeg, and dried rose petals.
Lightly roast the spices until they release their wonderful aroma. Be careful not to burn them.
Allow the roasted spices to cool, then grind them into a fine powder. Keep the freshly prepared garam masala aside.
Step 2: Marinate the Chicken
Take a large mixing bowl and add the 1.5 kg chicken pieces.
Add the following ingredients:
Ginger paste
Garlic paste
Green chilli paste
Sour curd
Cashew nut paste
Charmagaz paste
Poppy seed paste
Turmeric powder
Kashmiri red chilli powder
Mix everything thoroughly so that the chicken pieces are evenly coated with the marinade.
Cover the bowl and leave the chicken to marinate for approximately 30 minutes.
Step 3: Heat the Oil and Ghee
Place a large, heavy-bottomed kadai or cooking pan over medium heat.
Add the white cooking oil and allow it to warm slightly.
Add 2 teaspoons of ghee and heat the mixture well.
Step 4: Prepare the Fried Onions (Beresta)
Add the finely sliced onions to the hot oil.
Fry them until they become golden brown and crispy, stirring occasionally to ensure even cooking.
Carefully remove the fried onions from the kadai and keep them aside.
Leave the remaining oil in the same kadai for cooking the chicken.
Step 5: Cook the Marinated Chicken
Add the marinated chicken pieces to the same kadai containing the hot oil.
Reduce the flame to low or medium heat.
Cook the chicken slowly, stirring occasionally, until the marinade thickens and the chicken is well coated with the masala.
Continue cooking patiently so that the spices develop a rich flavour and the chicken absorbs the aromatic marinade.
Step 6: Add the Fried Onions and Garam Masala
Add the prepared fried onions (beresta) to the chicken.
Sprinkle the freshly ground homemade garam masala over the chicken.
Mix everything thoroughly and continue cooking over low to medium heat.
Allow the chicken to cook slowly so that the flavours of the fried onions, aromatic spices, nuts, and curd blend beautifully together.
Step 7: Add Salt and Cook Covered
Add salt according to your taste.
Mix well, then cover the kadai with a lid.
Cook over a low flame, stirring occasionally to prevent the masala from sticking to the bottom of the pan.
Allow the chicken to cook until it becomes tender and fully cooked.
Important Tip: The longer you cook the chicken slowly, while taking care not to burn the masala, the deeper and richer the colour and flavour will become.
If the masala becomes too thick before the chicken is fully cooked, add a small amount of hot water as needed.
Step 8: Final Cooking and Serving
Once the chicken is tender and the masala has thickened into a rich, aromatic gravy, turn off the heat.
