🥚 Eggs: 2, beaten well

🍞 Breadcrumbs: As required

🛢️ White Cooking Oil: As required for deep-frying

👩‍🍳 Method of Preparation

Step 1: Marinate the Chicken

🍗 Take 6–7 chicken leg pieces in a bowl.

🫚🧄 Prepare a smooth ginger-garlic paste without adding water.

Add the ginger-garlic paste to the chicken and coat each piece thoroughly.

Cover the bowl and allow the chicken to marinate for approximately 30 minutes.

Step 2: Steam the Potatoes and Chicken

🥔 Wash 3 medium-sized potatoes and place them in a pot of water.

Cook until the potatoes are completely soft and tender.

🍗 Place the marinated chicken pieces in a heatproof, perforated steaming tray above the water.

Cover and steam the chicken until it is thoroughly cooked.

Important: Keep the chicken separate from the boiling water. Make sure the chicken is fully cooked before proceeding.

Step 3: Mash the Potatoes

🥔 Peel the boiled potatoes once they are cool enough to handle.

Place them in a large mixing bowl.

Mash the potatoes thoroughly until they become smooth and lump-free.

Tip: You can also grate the boiled potatoes using a grater to achieve an even, smooth texture.

Step 4: Separate the Chicken from the Bones

🍗 Remove the steamed chicken from the heat and allow it to cool enough to handle safely.

Carefully separate the cooked chicken meat from the bones using your hands.

Keep the bones aside, as they will be used as handles for shaping the cutlets.

Finely shred the chicken meat and mash it gently with your hands to break up any large pieces.

Step 5: Mix the Chicken and Potatoes

🥔 Add the mashed potatoes to the shredded chicken.

Mix both ingredients thoroughly using your hands until they are evenly combined.

The mixture should be soft, smooth, and firm enough to hold its shape.

Step 6: Add the Spices

🌶️ Add 1 teaspoon of Kashmiri red chilli powder.

🧂 Add ½ teaspoon of black salt.

🌿 Add 2 teaspoons of the prepared roasted spice powder.

🌾 Add 2 teaspoons of all-purpose flour for binding.

🧂 Add regular salt to taste.

Mix everything thoroughly until the spices are evenly distributed throughout the chicken and potato mixture.

Tip: If the mixture feels too soft to shape, chill it in the refrigerator for 15–20 minutes before forming the cutlets.

Step 7: Shape the Chicken Cutlets

🍗 Take a small portion of the prepared mixture and shape it into an oval.

Take one of the reserved chicken bones and insert it into one end of the oval, leaving approximately half of the bone exposed.

Gently press the mixture around the bone so that it stays firmly in place.

The finished cutlet should resemble a chicken lollipop, but with an elongated oval shape.

Repeat the process with the remaining mixture and bones.

Arrange all the shaped cutlets on a plate.

Step 8: Prepare the Egg Wash

🥚 Crack 2 eggs into a bowl.

Beat the eggs thoroughly with a fork until the yolks and whites are completely combined.

Keep the beaten eggs ready for coating.

Step 9: Coat the Cutlets with Breadcrumbs

🍞 Spread the breadcrumbs on a plate.

Take one shaped chicken cutlet and dip it into the beaten egg.

Make sure the entire surface is coated with egg.

Next, roll the cutlet in the breadcrumbs, pressing gently so that the crumbs stick evenly to the surface.

Repeat with all the cutlets.

Extra-Crispy Tip: For a thicker, crunchier crust, dip each cutlet into the beaten egg and breadcrumbs a second time.

Step 10: Fry the Chicken Cutlets

🛢️ Heat sufficient white cooking oil in a deep frying pan or kadai over medium heat.

Once the oil is moderately hot, carefully place the coated cutlets into the oil.

Fry them over medium heat, turning them gently so that all sides become evenly golden brown and crispy.

Do not overcrowd the pan. Fry in batches if necessary.

Once the breadcrumb coating is crisp and golden brown, remove the cutlets and place them on a plate lined with kitchen paper to absorb excess oil.

Important Cooking Tips:

Do not fry the cutlets over very high heat, as the breadcrumbs may burn before the centre becomes hot.

Since the chicken and potatoes have already been cooked, the goal is to heat the cutlets thoroughly and create a crispy coating.

Maintain a steady medium heat for the best results.

Step 11: Serve and Enjoy!

🍗 Arrange the hot, crispy chicken cutlets on a serving plate.

🥒 Serve with fresh cucumber, onion, and tomato salad.

🌿 Add a small bowl of traditional Bengali kasundi mustard sauce on the side.

Enjoy these delicious homemade chicken cutlets while they are hot and crispy!
