π¨βπ³ Cooking Method: Step by Step
Step 1: Wash and Soak the Rice π
Wash the biryani rice thoroughly under running water until the water becomes relatively clear.
Soak the rice in water for approximately 30 minutes.
Drain the water before cooking.
Step 2: Marinate the Chicken π
Take the chicken pieces in a large mixing bowl.
Add the following ingredients:
π₯£ Beaten sour curd
π§ Ginger-garlic paste
πΆοΈ Red chilli powder
πΏ Coriander powder
πΎ Cumin powder
π§ Salt to taste
π€ Garam masala powder
π’οΈ A little cooking oil
Mix everything thoroughly so that the chicken pieces are evenly coated with the marinade.
Cover the bowl and allow the chicken to marinate for 30 minutes.
Step 3: Fry the Potatoes π₯
Heat cooking oil in a deep frying pan or kadai.
Peel the potatoes and coat them with salt and turmeric powder.
Fry the potatoes until they turn golden brown on the outside.
Remove them from the pan and keep them aside.
Step 4: Cook the Marinated Chicken π
In the same kadai, add a little more cooking oil if required.
Add a small quantity of whole garam masala and 2β3 bay leaves.
Next, add the marinated chicken.
Cook over medium heat, stirring occasionally, until the chicken is well browned and the masala is thoroughly cooked.
Add the fried potatoes and cook until the chicken is nearly done and the flavours have blended together.
Keep the chicken gravy aside for layering.
Step 5: Boil the Rice π
Take sufficient water in a large pot.
Add the following ingredients:
π§ Salt to taste
π€ Whole garam masala
π Bay leaves
Bring the water to a boil.
Add the soaked and drained rice.
Cook until the rice is approximately 70% cooked. The grains should remain firm because they will finish cooking during the dum process.
Drain the rice carefully.
Step 6: Prepare the Saffron Milk π₯
Warm a small quantity of milk.
Add a pinch of saffron strands and allow them to soak until the milk develops a beautiful golden colour and aroma.
Keep the saffron milk aside for layering.
Step 7: Arrange the Biryani Layers π²
Take a heavy-bottomed handi or biryani pot.
First Layer: Chicken and Potatoes
Spread the cooked chicken and potatoes evenly across the bottom of the handi, together with some of the masala gravy.
Second Layer: Rice
Spread a layer of partially cooked rice over the chicken.
Add some fried onions (birista) on top.
Third Layer: Flavourings
Drizzle the following ingredients over the rice:
π₯ Saffron-infused milk
π§ Ghee
πΈ Kewra water
πΉ Rose water
π Dried plums (Alu Bukhara)
π§ Fried onions
π€ A little special biryani masala
π₯ A small quantity of beaten curd, if desired
π― One drop of meetha attar, if desired
π₯ A little grated or crumbled khoya
Repeat the layers, alternating rice and chicken as needed, until all the ingredients have been used.
Finish with a layer of rice and the remaining garnishes.
Tip: Use the flavouring ingredients sparingly so that their aromas complement the biryani rather than overpower it.
Step 8: Seal the Handi π
Prepare a soft dough using flour and water.
Apply the dough around the rim of the handi and place the lid firmly on top.
Seal the edges to prevent steam from escaping.
This helps the biryani cook slowly and absorb the flavours of the spices.
Step 9: Cook the Biryani on Dum π₯
Place a large pot or tawa on the stove and add some water to it.
Bring the water to a boil, then carefully place the sealed biryani handi over the larger pot, ensuring it is stable and does not come into contact with the water.
Cover and cook over low heat for approximately 30 minutes, or until the chicken and rice are completely cooked.
Alternatively, the handi can be placed on a thick tawa over very low heat. Make sure the bottom does not burn.
Allow the biryani to rest for 10 minutes before opening the lid.
Step 10: Serve the Chicken Biryani ππ
Carefully break the dough seal and open the lid.
Gently fluff the rice without breaking the grains.
Serve the hot, aromatic chicken biryani with:
π₯£ Cucumber raita
π§ Sliced onions
π Lemon wedges
π₯ Boiled eggs, if desired
