Delhi famous Chole Bhature
Chole Bhature Recipe
- Ingredients
For Chole (Chickpea Curry)
250 g dried chickpeas (kabuli chana)
2 medium onions, finely chopped
2 medium tomatoes, finely chopped or pureed
1 tbsp ginger-garlic paste
2–3 green chillies, finely chopped
2 tbsp cooking oil
1 tsp cumin seeds
1 bay leaf
1 small cinnamon stick
2–3 cloves
2 green cardamoms
1 black cardamom, optional
1 tsp turmeric powder
1½ tsp red chilli powder
2 tsp coriander powder
1–2 tsp chole masala
½ tsp garam masala
½ tsp amchur (dry mango powder)
Salt to taste
2–3 cups water, as required
Fresh coriander leaves for garnishing
For Bhature
2 cups all-purpose flour (maida)
2 tbsp semolina (sooji/rava)
½ cup plain yogurt
1 tsp sugar
½ tsp salt
½ tsp baking powder
¼ tsp baking soda
1 tbsp oil
Warm water, as required
Oil for deep frying
- Preparing the Chickpeas
Step 1: Wash the dried chickpeas thoroughly under running water.
Step 2: Soak them in plenty of water for 8–10 hours or overnight. The chickpeas will become soft and almost double in size.
Step 3: Drain the soaking water and rinse the chickpeas once again.
Step 4: Transfer them to a pressure cooker. Add fresh water, a little salt, and optionally one bay leaf.
Step 5: Pressure-cook until the chickpeas become completely soft but still retain their shape.
Tip: When you press a cooked chickpea between your fingers, it should mash easily.
- Preparing the Chole Masala
Step 1: Heat 2 tablespoons of oil in a heavy-bottomed pan.
Step 2: Add cumin seeds and let them crackle.
Step 3: Add the bay leaf, cinnamon, cloves, green cardamoms, and black cardamom.
Step 4: Add the chopped onions and sauté over medium heat until they become golden brown.
Step 5: Add ginger-garlic paste and chopped green chillies. Cook for about 1–2 minutes until the raw smell disappears.
Step 6: Add the chopped tomatoes or tomato puree.
Step 7: Cook until the tomatoes become soft and the oil begins to separate from the masala.
Step 8: Add turmeric powder, red chilli powder, coriander powder, and chole masala.
Step 9: Mix everything well and cook the spices for another 1–2 minutes.
- Cooking the Chole
Step 1: Add the boiled chickpeas along with some of their cooking water.
Step 2: Mix everything thoroughly so that the masala coats the chickpeas.
Step 3: Add salt according to taste.
Step 4: Cover the pan and simmer on low heat for 15–20 minutes.
Step 5: Gently mash a small portion of the chickpeas with the back of a spoon. This makes the gravy thicker and creamier.
Step 6: Add amchur powder and garam masala.
Step 7: Simmer for another 3–5 minutes.
Step 8: Turn off the heat and garnish with freshly chopped coriander leaves.
Your spicy, aromatic Punjabi-style Chole is ready.
- Preparing the Bhature Dough
Step 1: Take 2 cups of all-purpose flour in a large mixing bowl.
Step 2: Add semolina, sugar, salt, baking powder, and baking soda.
Step 3: Add plain yogurt and 1 tablespoon of oil.
Step 4: Mix everything together.
Step 5: Gradually add warm water and knead into a soft, smooth and slightly sticky dough.
Step 6: Knead the dough for about 5–7 minutes. Good kneading helps produce soft and fluffy bhature.
Step 7: Apply a little oil over the dough.
Step 8: Cover the bowl with a clean cloth or lid and allow the dough to rest for 1–2 hours.
- Shaping the Bhature
Step 1: After resting, knead the dough gently once again.
Step 2: Divide the dough into equal-sized balls.
Step 3: Lightly grease your hands and rolling surface with oil.
Step 4: Take one dough ball and roll it into a round or slightly oval shape.
Step 5: Keep the bhatura slightly thicker than a regular roti. This helps it puff up beautifully while frying.
- Deep-Frying the Bhature
Step 1: Heat sufficient oil in a deep kadai over medium-high heat.
Step 2: The oil should be hot enough before adding the bhatura.
Step 3: Carefully slide one rolled bhatura into the hot oil.
Step 4: Immediately press it gently with a slotted spoon. This encourages the bhatura to puff up.
Step 5: Once it puffs up, fry until the bottom becomes golden.
Step 6: Turn it over and fry the other side for a few seconds.
Step 7: Remove the bhatura and place it on a paper towel to absorb excess oil.
Repeat the process with the remaining dough.
- How to Serve Chole Bhature
Serve the hot, fluffy bhature immediately with the spicy chickpea curry.
For a traditional presentation, serve with:
Fresh onion rings
Green chilli
Lemon wedges
Pickle
Fresh coriander
A little yogurt or raita
Restaurant-Style Serving
Place 2 hot bhature on a large plate and serve a generous bowl of steaming Punjabi chole alongside them. Garnish the chole with fresh coriander and ginger julienne. Add onion rings, lemon, and pickle on the side.
The result: crispy and fluffy bhature paired with rich, spicy, tangy and aromatic chole—a classic North Indian comfort food.
